Hello to all!
I haven't been on this forum in forever because I've pretty much been in remission (and I have a toddler), though I still could not eat things like nightshades/alcohol/sugar alcohol/lactose/spinach (I'm allergic to all grains, legumes, nuts, seeds, eggs and shellfish), and I discovered I have a genetic predisposition to being intolerant to mushrooms, which have been a trigger. Fascinating stuff.
But I was good. I even had a complete break from these issues during pregnancy in 2016-2017 & could eat tomatoes - and I did, probably spent around $800 on heirloom tomatoes, and I'm not sorry.
I had COVID-19 in March (and when I say "in March," what I really mean is I didn't start feeling anywhere near normal til June...longhaulers unite!), and completely lost my ability to digest even the idea of lactose (no more fermented dairy for me, which had actually been a safe food), started reacting to previously innocuous foods like cucumbers and produce in general (mainly vegetables), you name it. My son had a much milder case than I did, and his IBS has been horrible, ever since.
I seem to be ok with unflavored Paleo Protein powder (Amy Myers), blended with frozen bananas and some water. If I just gave that and a green smoothie of frozen mango, frozen strawberries, water and kale, I am ok. Other than that and plantain bread & the standard animal proteins, I don't know what to eat at this point. My 3 year old daughter loves enjoying produce snacks with me, and I keep angering the tummy to be a good example for her.
I have lipedema, also, which complicates things because eating cooked, watery foods (soups, broths, stews, steamed veggies) causes major weight gain in the form of fluid retention (I can gain 7 pounds from a delightful bowl of steamed cauliflower or cabbage).
Has anyone had this issue post COVID infection? Any luck healing? How long did it take compared to past relapses?

I have racked my brain trying to figure out what tiny helpful thing I could suggest, because you really have a restricted diet. What I came up with was a better way to digest a few of the things that you know you can have as perhaps you have lost some of the acids in the stomach due to covid. I have not had covid (at least diagnosed anyway) I had a hellish respiratory illness the whole month of November 2019 and the lingering effects of it continued into December so who knows what that heck that was! I use Betaine HCL to help with my digestion of foods, I take one capsule with each meal. Also in the link below Betaine can be made from many types of sources so obviously I sought out anything that was Gluten and Dairy free.
