A food / diet related question:

There are flours out there that are not made from grains such as: coconut, arrowroot, cassava, tigernut, chestnut, and blanched almond flour.
I find that all Autoimmune Paleo Diet cookbooks offer a lot of recipes with these flours as well as blanched almond flour which results in delicious baked goods.

All are gluten free. Could there still be a high fiber content issue for us and or cross contamination issue due to processing?

I have been making a delicious cassava and mashed overcooked cauliflower nan bread. Can't eat rice or white potatoes anymore.
Cassava is a root vegetable. I seem to do well with most root vegetables.

Any experiences out there in our group with using any of the above mentioned flours?
