POTATOES

Is it ok to eat the skin on baby white or red potatoes if you roast or steam? Forgive me if it is already on the site but I have found nothing so that is why I am asking. I did find something about Sweet Potatoes and I thought they had a lot of fiber so was steering clear of those.

If you've been in remission for a while, then eating the skins on potatoes should be OK. But if you're not in remission, the skins might cause problems, depending on your degree of inflammation, because most of the fiber is concentrated in the peeling or outermost layer of grains, fruits, and vegetables.

For me, well cooked sweet potato has been one of my trusted staples for the past 11.5 years.
I peel all my vegetables before cooking

I am asking because I have been on Budesonide again and doing well, down to 3mg a day and I have been eating white potatoes like every other day since that is the only thing on my Enterolab that came up with no reaction. I have started to have some problems. Been very very careful with every other food that has gone in my mouth for months. The AIP Protocol says to not eat any night shades which is potatoes. Is it possible that is causing a flare. It has been roasted potatoes or Boulder Potato chips that at GF and just potatoes and Avacado Oil.

If your EnteroLab results showed potatoes to be safe, then the chances that they are causing problems (other than the fiber in the skin) are extremely low — not zero, but mighty close. Another reason to always peel potatoes is solanine, which can be present in the upper 1/8" under the skin in potatoes which have a green tint. Potatoes are in the genus Solanum. Solanine buildup occurs when the growing tuber is exposed to sunlight. Most of them don't have any such problem. But if they do, solanine is toxic, so eating too much of it can cause digestive system distress. Peeling potatoes eliminates the problem.
