Enterolab results - what can I eat???
Hello my friends! I appreciate you all and hope you are well!
Well, after a long 4-5 months taper, I successfully got off Lexapro and feel pretty well emotionally! And better digestive wise too. The D has decreased to once or twice per day, but I'm still not healthy and normal.
These are the Enterolab results I got this week - can you please help me figure out what to eat????
Fecal Anti-gliadin IgA 59 Units (Normal Range is less than 10 Units)
Fecal Anti-casein (cow’s milk) IgA 96 Units (Normal Range is less than 10 Units)
Fecal Anti-ovalbumin (chicken egg) IgA 103 Units (Normal Range is less than 10 Units)
Fecal Anti-soy IgA 70 Units (Normal Range is less than 10 Units)
Mean Value 11 Antigenic Foods 65 Units (Normal Range is less than 10 Units)
+3 foods are: Corn, Chicken, Cashew, White potato
+2 foods are: Oat, Rice, Pork, Tuna, Beef, Walnut, Almond
Questions - I think I can eat Turkey even though Chicken is very high, right? What other sources of protein? Is it okay to eat only Turkey for protein?
I thought Ripple pea protein shakes were okay, but I don't think they are settling well - is pea related to soy?
For soy, do I need to avoid soybean oil and soy lecithin too? My son is allergic to soy and he only has to avoid the protein, not the oil.
Do I need to avoid all fish bc of the tuna score? no salmon, white fish, or shrimp?
Does a diet of only turkey, sweet potato, avocado, sunflower seed butter, bananas, quinoa seem reasonable?

No separation process is perfect. Soy oil contains enough of the soy protein to contaminate it for anyone who is sensitive to soy. Not necessarily, but safe fish might be difficult to find. A sensitivity to soy should not rule out shrimp. Unless you are otherwise allergic to them, all shellfish should be safe, including muscles, prawn, oysters, octopi, clams, etc.
That diet will probably work. Some of us eat a more restricted diet than that. All we really have to eat for good health is protein and fat. Carbs and fiber are optional, and we're better off without them before we get to remission. Wild game or grass fed meats will work (with your gluten and soy result avoid anything grain fed)
Avoid every aspect of soy - double check make up and bathroom products. Anything with 'Vit E' will have soy
not sure if Hemp protein will work for you, although animal based protein is better option where possible

Hello:
I have similar Enterolab results and trying to maintain distance running hobby through this and have found the following foods to OK for me so far (~8 months strict diet):
1. Coconut milk (organic, no gums, if you can't find at store can order on Amazon that's what I do). Lots of calories and pretty tasty.
2. Sweet potatoes. Slice and bake in air fryer, brush with olive oil and salt.
3. Bananas that are ripe.
4. Lamb, it's a little expensive eat maybe twice a week. Found most economical is to buy a whole roast and cut it into portions to cook separately.
5. Buckwheat groats - for breakfast replacement for oatmeal (with coconut milk, bananas, sunflower butter = like a 1000 calories)
6. Soft cooked carrots.
7. Freshwater trout, also expensive sometimes it's on sale in my area at Aldi's.
8. Terra chips sea salt seasoned (parsnip, taro, sweet potato) available at Costco.

Thank you, thank you!!! You are all so kind and generous with your time and knowledge, and your responses are so helpful. I'm heading to Whole Foods now with a reasonable game plan.
The million dollar question is: When will I know if the new diet is helping? Or if I need to adjust/restrict/fine tune more? Days? Or weeks?

Probably weeks, maybe months. A few improve within a few days. We're all different, and our recovery time depends on the severity of our intestinal damage, the quality of our recovery diet, and the ability of our immune system to heal damaged cells.

One thing I don't understand - why is turkey safe when chicken is not for me? I have been eating both my whole life and they seem to be such similar animals/meats. I know there must be an explanation that I'm missing.

It's not just you. Chickens and turkeys are different for everyone. They're only distantly related (as opposed to closely related) species. Domestic chickens and turkeys evolved differently. If you look at the scientific classifications, you'll see that they split at the genus level:
Turkeys

order: Galliformes, family: Phasianidae, genus: Gallus (junglefowl)
