I've just completed Tex' book and do not see chicken or beef on the list as a safe food.

Where I live, we don't have many Emu, Goat or Antelope choices (Kidding).

I see recipes for Cornish Hens, Beef Bone. To be honest I'm not much of a meat eater anyway, but my mainstay lately has been beef & Rice with Avocado, and white sliced chicken of roast on Glutton Free Bread. I guess these are out too?

Chicken and Beef tend to be fed lots of grain (gluten, soy, corn) so for those that are very sensitive to these grains, they can be impacted by chicken and beef
if you can get grass fed beef you are less likely to react

Some people do ok with chicken - it just depends
in regards to chicken on gluten free bread, a better nutritional option is chicken with cooked vegetables.
