Knox Unflavored Gelatin Safe?

Quick question:

Since my Entero Lab Result was highest for chicken, beef, pork and last tuna, is it safe to make apple juice jello
with Knox unflavored gelatin? Still navigating the site for answers and figuring out my safe foods and haven't found this question posed yet.

The only ingredient in Knox unflavored gelatin is collagen, which is usually sourced from cows or pigs. Depending on the level of your Enterolab test results on the 11 other antigenic foods test, it's probably safe for you to use, unless your score on the test is significantly higher than, say, the middle teens. If your score was up in the 30s or 40s, it would be more likely to be risky, but since we are all different, that's not chiseled in stone.

Beef and pork were both in the 2+ category...so maybe I'm better off continuing to eat lamb instead of making apple
juice jello with Knox gelatin. Sometimes I feel like I'm swimming in murky waters!!

Usually, the overall score is more important than the relative rankings of those foods in the tests, but we don't all seem to be affected at the same rates, probably because our sensitivity levels variant individually. Doing what you decided, is the safest policy of course, but testing foods in this category (the 11 other antigenic foods), is not as risky as trying a food in the big four category that's comprised of gluten, casein, soy, and chicken eggs. In other words if you have a reaction to one of the foods in the 11 other antigenic food category, normally it will only last for a day or two, with little to no risk of triggering a relapse.
