Hi Cave Dwellers and visitors to the cave,

We have discussed in the past the health benefits of sauerkraut. But there is a additional one that both Matthew and I have read about. Apparently sauerkraut contains lactobacillus (good bacteria), which makes it an excellent non-dairy probiotic.

However, I guess that it must be eaten raw to get this benefit - I'm sure that heating it would kill the bacteria. Does anyone have additional info or thoughts about this?

Hi Polly,

If one can't aquire a taste for eating it cold, heating it a little to take the chill off would be less likely to kill the good bacteria than running a boil.

We had a bad cabbage crop last fall so I've been buying Bubbies at a health food store- It's really good, and I enjoy it cold most of the time.

I didn't even realize it was legal to heat sauerkraut. LOL.
