I thought a good piece of info to compile would be our collective reaction times to those foods that set us off in the first place.

Here's gluten, I'll add polls for others too.

You know, it's a sad situation, but I honestly don't know either. I have never touched any since starting the diet, (to the best of my knowledge), and could never correlate it before I started the diet. Sigh.

I'm so sorry, me too. I know dairy gives me mood swings starting within hours, and then it's gone when I get massive D 30 hours later. As for gluten, I'll get D 30 hours later, but I can't really isolate other things it might be doing.

I'm not sure either. My guess would be 12-24 hours, but I haven't "tried" to introduce gluten to see.

Perhaps you could have a category for greater than 24 hours. 12 to 24 hours is a bit long for a category IMHO.

Sorry I did not vote, but I am not sure yet...
If this can help... I ate some canneloni with bechamel (cooked by a friend of mine) and eating I started having headache... That night I felt horrible with nauseas...

I have never tried again.
