Buckwheat Revisited

Kitchen Buddies-

I have experimented with Buckwheat with great success in the last few weeks. Using the recipes from this site-

I have made the Pancakes, Muffins and Crepes.

The Pancakes are very light and fluffy. As good as or better than a wheat Pancake. I used a lot more blueberries than the recipe called for , used plain cinnamon since I had no apple pie or pumpkin pie spice mix and left out the lemon extract since citrus is a problem for me. I would never eat just pancakes for breakfast like I used to but one pancake was I nice addition to the fruit, vegetables, meat or eggs that I usually eat. They keep several days in the icebox and made a good snack spread with nut butter and fresh fruit.

The Muffins are just as good as the Pancakes . Again I used cinnamon instead of the apple pie spice mix and added a good handful of chopped walnuts. They do not dry up in a plastic bag in the icebox and turn into door knobs like so many of the other GF products.

I made a fish stew using white fish, garlic , onions and broccoli. Rolled it up in the crepes, I left out the Lemon , Vanilla extract and cinnamon and seasoned it with Salt, Pepper and Rosemary and covered it with a Cauliflower white sauce using Polly’s idea . The Crepes are not like wheat or corn tortillas in that they get a little mushy but it was quite good anyway.

I have so many other good things to eat that I have not eaten it more than twice a week but it does make a nice addition to my diet and so far has not created any complications.

I hope this gives you some good ideas.

I think I'll have to try some buckwheat. I'm always happy when someone else is the guinea pig.
