Gourmet Dinner last night

Hi gang,

Just thought I'd tell you about our delicious dinner last evening.

For appetizer, we had this delicious corn and potato soup that contains, among other things, a little cilantro, but not too much -- very subtle.
Think this recipe came from one of the Gourmet Magazines.

Best part was the main course. What she did was put some Jerk Seasoning (I took over some from that Baron's line Savoury something that comes in brown plastic bottles at WFs -- has a tiny amount of jalapena in it, but only tasted that once or twice, so generally wasn't that hot if ya don't exceed the recipe amount) on some MAUI MAUI fish.

Maui Maui fish came from WF's frozen section, 465 Brand in the packages. It's very good!

First, she followed the recipe by sautee'ing red and green peppers, probably onions, and, would you believe, okra! I'm no doubt leaving out something essential, but right before you're ready to put the fish on top of the veggies in the big skillet to steam til done, ya pour coconut milk alllll over the top. Toward the end of all the veggie ingredients, I forgot to mention, you put some thinly cut strips of fresh basil leaves.

I'm tellin' ya, this makes for the best smell you've EVER smelt.
When it's all done, the complexity of the combination is wonderful.

You'll never believe where she got the Maui Maui recipe. Have any of you received a little booklet from Walmart lately in the mail?
Yep, that's where it came from! Think they are advertising their new organic lines of things, so threw in the recipes that use these things.

It's a good idea to look through things you get in the mail that might have anything to do with food or have recipes before tossing them, just in case you might miss something like this, and they don't cost you a thing.

I am going to try to find other jerk seasonings that are variations from the one we tried, just to see if they taste any different. Is it common for Jerk Seasonings to include jalapena and paprika? These were pretty low on the list of ingredients though. It was a delicious combination of spices though, so probably will end up being our favorite.

I need to get a copy of that and let you all try it. Not sure when that will be though.
