I just tried to make cookies again using different ingredients. I reached for the powdered vanilla and decided to look at the label. It contains cellulose!!!

Darn it, I bought it when I was only GF and haven't used it since if found my other intolerances. The good news is that I can try the old recipe again.

Don't feel bad Jean, we have all made that mistake before. Glad you can try the old reciepe again. It's too hot here right now to bake cookies. I do most of my baking in the Winter, heats the place and we get good food. Love Oma

Hi Jean,

You're intolerant of cellulose? I didn't realize it contained any protein. I thought it was an inert carbohydrate.

Cellulose is usually made from corn. It might be made from the stalk, but I"m assuming is has some protein.

Hi Jean,

I didn't realize that cellulose is generally made from corn. It's a non-starch carbohydrate that's indigestible by the human digestive system. In nature, it comprises the stalk on many/most plants. As best I can recall, you're right about cellulose containing a small amount of protein, (it's very low, like maybe 1 or 2 % at best). I did a quick search and couldn't find any reference to the type of protein, so I don't know if it would be zein, (the primary protein in corn), or something else.

To be honest, until now, I didn't realize that it could be a trigger, I always assumed that it was inert. Shame on me.
