Beef Brisket in the crockpot

Beef Brisket in the crockpot

Brown a 2 - 2 1/2# trimmed beef brisket in oil.
Then place 1 cup baby carrots, 5 small, quartered, red potatoes, and 1 large, quartered onion in the bottom of the crockpot. Take 3 tablesppons of arrowroot, or whatever thickening that you use and mix with 1/4 cup of cold water and pour over the vegetables. Then lay the brisket on top of the vegetables. Combine 3/4 cup red wine, 1 tablespoon dijon mustard, 1/2 tsp. dried thyme, 1/4 tsp. rosemary, 1/2 tsp. salt, 3 minced garlic cloves and a bay leaf. Pour that over the brisket. Cook on high 5 hours or low for 8-9 hours.. It will make its own gravy.. Take out of crockpot when done and slice..
