Potato Cakes

3 cups leftover mashed potatoes
2 tsp. onion powder
1/2 tsp. garlic powder
salt & pepper to taste
1 tablsp. arrowroot or cornstarch
Mix together and make into patties (Like you're forming a hamburg.)
Heat about 2 tablespoons of oil in a skillet on medium and brown about
4-5 minutes on each side..

Mmmmmmm! I love these, too.

For a variation: use shredded uncooked potatoes, diced fresh onion and fresh garlic. Cooking time is about the same.
