Porcupine Meatballs

1# ground beef
1 egg
1/4 cup uncooked rice
1/2 chopped onion
1/2 teaspoon salt
1/4 teaspoon pepper
1 grated carrot
1- 14oz can of Hunt's tomato sauce or you can use Imagine's tomato soup with 1 tablespoon brown sugar or raisins
Mix the first 7 ingredients and make into about 20 meatballs. Put them in a skillet and pour the sauce or soup over them. Cover and simmer for 40-50 minutes. Stir about every 10 minutes..
I like these with mashed potatoes and a vegetable..

Baked Chicken Breast

4 boneless, skinless chicken breast halves
In a bowl mix 1 cup of Hellman's mayo
1-1/2 teaspoons GF season salt
1/2 teaspoon pepper
1 teaspoon GF garlic powder
1/2 cup parmesan cheese ( I use a product called Parma which is a vegan parmesan made from walnuts, nutritional yeast and sea salt.) There is no soy, gluten, no preservatives, no GMO and is candida free. It has Omega 3's, B-12 and trace minerals.
Mix mayo and seasonings and spread over chicken.
Bake at 375 for 45-60 minutes.
