Breakfast Cake

1-1/2 cups walnuts or almonds (put in processor and pulse into a fine meal)
1/2 c GF flour blend
1/4 tsp xanthan gum
1 tsp baking powder
1 tsp baking soda
1-1/2 tsp cinnamon or pumpkin pie spice
1/4 tsp salt
2 eggs
1/3 c canola oil
1-1/2 c brown sugar (or half brown sugar/half Splenda) 3/4th cup each)
2 ripe bananas
2 tsp vanilla
Mix oil, eggs, sugar, banana,vanilla until smooth.
Then add the dry ingredients and mix well.
Bake at 350, in a foiled lined 10-12" baking dish that has been sprayed with cooking spray, for 40 minutes.
