Soy-Free, Egg Free Mayonnaise

Soy-Free, Egg Free Mayonnaise

This is very easy to make in a blender and tastes like the "real" thing.

SOY-FREE, EGG-FREE MAYONNAISE

1/2 tsp. salt
1/4 tsp dry mustard
dash paprika
dash cayenne
2 tablespoons vinegar
1 cup oil (corn, canola, safflower, etc.)
2/3 cup water
2 teaspoons xanthan gum
1 tablespoon lemon juice
dash onion powder
1 tablespoon sugar (optional)

Blend all ingredients except oil together in blender. Add oil slowly, blending as you pour. (May need to stop blender and stir a couple of times.) Pour into jar and store in refrigerator. Use for sandwiches, in salads and in GF pasta. For a little thicker mayonaisse, add 1-2 tsp. arrowroot powder to dry ingredients.
