Watercress Salad

Watercress Salad

Do any of you remember as a child eating dandelion salad??
I remember my siblings & I going out to get the dandelions for our Mother.
This salad reminded me of those times with the exact salad dressing.
1 bunch of watercress
4 strips of browned bacon (after cooked lay on a paper towel to drain, then crumble)
Save the bacon drippings in the skillet
1/2 cup chopped cucumber
1/2 c chopped tomato
2 hardboiled eggs chopped
Trim the stems from the watercress.
Then rinse the watercress in cold water, drain well.
Put the watercress in a bowl.
To the skillet with the bacon drippings add 1/4 cup vinegar and 4 teaspoons of sugar. Heat to a boil.
Then pour the hot dressing over the watercress & toss well.
Add the crumbled bacon, cucumber, tomato, and chopped eggs
Toss again......
