Zucchini Bread

Zucchini Bread

3 eggs
1 cup oil
2 cups sugar
2 tsp vanilla
Beat: eggs, oil, sugar, vanilla until thick.
2 cups shredded zucchini
1 can (8 oz.) crushed pineapple, drained
3 cups gf flour mix:
2 tsp baking soda
1 tsp salt
1/4 tsp baking powder
2 tsp cinnamon
1 cup chopped walnuts

Stir in and blend well remaining ingredients. Pour into 2 greased
5x9 loaf pans.
Bake a 350 degrees for 1 hour.
