Gluten Free!

Well not exactly yet, tommorow I start life without gluten. My wife has decided it would be easier for both of us to get off gluten, this way it would eliminate any chance of "contamination" in the kitchen.
We put our list together and shopped over the past couple of days. I went out fishing Sunday and caught a couple of striped bass, a dozen or so crappie (dinner plate size!)

As long as I don't become allergic to fish I think I'll do fine. We'll start with eliminating gluten and I'll see how my system responds over the next few weeks.

That will definitely make food preparation easier, and improve your chances of avoiding cross-contamination, if your wife is willing to change her diet, also.

Those are mighty nice fish. I see you have a few wind power generators in the background there, too.

How fortunate you are to have such a great wife. My husband couldn't even give up bread one time at a restaurant when I started GF living. :mad:

I have to tell you that GF worked very well at first.....probably for under two months. When I went to send my sample to EnteroLab, I had to take prunes and prune juice! Then I started having problems again and did the rest of the EL testing which said that I had an intolerance to soy. Tex says about half of us here have that intolerance. I hope and pray you won't be one of them.

Hi there,
I wish my mother could've gone fishing with you when she was physically able.
She just loves fishing, and being on the water. Yep, those are some fantastic catches.
