A Joyous Paleo Holiday from Matt’s Cave!

Hey all-
Had a lot of fun this year going to Holiday parties with out the fear and trepidation that I had many years ago when I first started healing through diet alone. The biggest realization over the years of healing is that Christmas get togethers are not about food and what I eat but about the joy of camaraderie and communicating with good friends. Don’t know about you but their are some people I only see at the holidays and it is always a joy to hook up, if only once a year, and share what has gone on and our hopes for the coming year. Priceless. Hardly matters about the food.

Had Christmas dinner with my sister and her partner, my cousin and a half dozen friends. My sister and Susan are both recovering from knee surgery and wanted to keep it simple and put me in charge. Ha,Ha,Ha! How much easier could it get to eat the way I need to. You guessed it, about a Paleo as possible. (PAP) I grilled steaks, steamed Bowls of green beans, Broccoli with roasted garlic , Kale with purple onions along with baked potatoes for those that wanted them and winter squash that didn’t. It makes me laugh that guests never miss all the other “stuff” and enjoy going home not “stuffed”.

Guest brought lots of deserts. I brought baked sliced breaburn apples covered with Elizabeth’s crumble from this sight

I got into a conversations with my cousin about some reading of Pema Chodron and only got the last scoop. Apparently the teenagers had discovered it despite that it had no added sugar and had devoured it before all the other ultra sweet desserts

My youngest nephew pleaded with me to give his Mom’s the recipe.

What could be more fun than that kind of accolade.

It sounds like you had a great time and the food sounds scrumptious. I can't find Elizabeth's crumble at that site - could it be on another site?

Happy Holidays from my cave to yours, Matthew!

Always good to hear from you. You have such a positive attitude about living with multiple food intolerances. It is an inspiration for many, I'm sure.

The menu sounds wonderful! And what a treat to be in charge! I haven't tried Eliz.'s crumble yet but definitely will soon. Do you add the Stevia that she recommends? I really don't like artificial sweeteners (artificial anything for that matter) and wondered if it would be sweet enough without adding it? If not, I'd rather use a little sugar or maple syrup if you think it would work OK.

Pema Chodren! At least THAT is something worth missing dessert over! :grin:

Polly and all-

I did not use any sugar or sweetener in the apple crumble. The night before I simply peeled and sliced enough apples to nicely mound a pie plate . Then pored about a cup of apple cider over the top. The apple cider is made by the same orchard where I got the organic apples . Nothing like eating local. Baked it for about an hour and a quarter until the apples were just soft. Did not want to turn them into applesauce.

The crumble part was coarsely chopped pecans,and dates and ground cinnamon . I sprinkled the mixture on top when I reheated it for about a half hour at 350 degrees just before serving

It thought it was plenty sweet even with the tart braeburn apples.

Using canned fruit would skip the step of cooking the apples.

I did not like the idea of the stevia either. If I never try it I suspect that it will be something I will not have to eliminate Hahaha!

How’s that for MI logic.
