Buckwheat Banana Muffins

This is from Eating Gluten Free by Shreve Stockton and is amazing. Hope you enjoy.

4 very ripe bananas
1/3 cup canola oil
1/3 cup maple syrup
1 cup buckwheat flour
1/2 cup millet flour
2T. arrowroot
1t. baking powder
1t. baking soda
1/2 t. xanthan gum
1/2t. salt
1/3 cup chopped walnuts

Preheat oven to 325 degrees F. In a large bowl, mash banana with oil and maple syrup. Mix all other ingredients, except walnuts, in another bowl. Add flour mix to banana mixture and stir to combine. Then add the chopped walnuts. Lightly grease pan and spoon in batter...3/4 full for muffins. Bake muffins 12-15 min. and 45 min. to an hour for loaf. Enjoy.

Dee,

Do you think I could still make these without the maple syrup? I don't care if they are sweet. It looks like the syrup is part of the liquid in this recipe. Would I just put more oil? I would want to leave out the fruit too and the walnuts. And maybe change the millet flour to something else. Thanks for your help!

Pat, Would this recipe be easier for you?? Let me know if you'd have substitute something else for an ingredient in the mix..
Gluten Free Dairy Free Muffin or Cake Mix
 
Make your own mix for easy and quick gluten free , dairy free muffins or cake. To make this
recipe sugar free substitute 1/8 - 1/4 tsp. of stevia powder.
  
1 1/4 cups white rice flour
1 cup brown rice flour
1/2 cup tapioca flour
1 teaspoon baking soda
4 teaspoons baking powder
1 teaspoon salt
1 teaspoon xanthan gum
1/3 cup sugar or 1/8 teaspoon stevia powder
.Mix all ingredients together and store in an airtight container for future use.
Muffins - to 1 cup of mix, beat together:.
3 eggs
1/2 teaspoons vanilla extract
2 tablespoons vegetable oil.
1/3 cup of any non dairy liquid ( rice milk, water, fruit juice etc. ).
Pour into flour mixture and beat until smooth
1/2 cup currents, raisins, nuts, dates or berries etc. can be folded in at this point. (optional)
Spoon into greased or paper lined muffin tins.
Bake 375 F oven for 12 - 15 minutes.
Makes 6 muffins.

Cake - Mix as for muffins but add more sweetening ( sugar , stevia , honey etc. )
If you are making an orange cake use orange juice for the liquid and some orange zest.
Spoon dough into greased 8" round cake pan. Bake in preheated 350 F oven for 20 - 25 minute. 16.Makes one 8 " round cake.

Dee,

Thanks for the recipe, but I am trying to eliminate rice right now. I "think" it is a problem right now. I guess I could sub Buckwheat flour for the rice flour? And I seem to have a problem with eggs too. That was one reason I liked the other recipe, it had no eggs.
