hi.
I went to the store to see what was good for dairy free pancake mix because I saw "Cherrybrook" on a website and they look like they would be ok, but none were available in the store. I went to order on the web and they want 8 to ship and then a 2.50 handling fee...more than the mix!
can anyone recommend a good dairy free pancake mix?? thanks!

I like Namaste. Their mixes are fairly allergen free, though some require the use of eggs. www.namastefoods.com

For a dairy-free "milk", you can use hemp milk, almond milk, or rice milk. You could also probably use coconut milk, but it's pretty rich, and high on calories.

Bob's Red Mill also makes a good pancake mix. The pancakes can be made with eggs or with an egg substitute.

thanks Gloria, I did try Bobs Mills buckwheat ones, and it didnt go over to well! maybe I will try another.
I bought arrowmills but saw that it contained Milk, GRRRRRRRR! :twisted:

Several of the mixes (I use Bob's Redmill or Maple Grove Farms, which is a Vermont company so I don't know how mainstream their mix is beyond my area) call for milk but work just fine with water as the liquid.

I mentioned this very simple pancake idea several years ago and many members have enjoyed it. The added plus for me is that it is also grain free. This is one of my perennial favorites in that it fits so well into the Paleo diet. And all the ingredients are so easy to find. You don’t even have to decipher labels.

1 egg
1 banana
3 tablespoons almond flour (very finely ground almonds)

Mash everything together with a potato masher. A few lumps will not matter.

Pour out four pancakes and fry on a lightly greased griddle on medium heat until lightly brown. Flip and cook for a few minutes more on the other side

Fantastic with real maple syrup and even better with fresh fruit or berries on top along with a nice piece of natural home made sausage.

Matthew, I'm guessing because it's mostly a banana mash that these don't keep well and have to be eaten right away? I'm looking for new things to have for breakfast but I like to eat with my first cup of coffee at work rather than trying to get up and going even earlier in the morning. right now I'm on a Kinnikinick donut kick having lost my old favorite - yogurt. But needless to say, sugary donuts are not the best idea for a healthy breakfast :roll:

PS: Rock on with real maple syrup... Vermont Gold! I hear this year that the retail prices are going to be $60+/gallon largely because the demand is far exceeding the supply. Vermont already produces more than NY, NH, and Michigan combined, and many producers are running extra sap lines this year and some who got evaporators to make it for friends and family only are going into production (which I would love to do, but it's time consuming...we had someone look at our 5 acres of land which is mostly lawn, and we could get about 75 taps on our property...that be about 2 gallons of syrup a day during the sap run...problem of course being you never know how long the sap is going to run because its weather dependant) I guess our culinary times are finding out how wonderful a product real maple syrup is!
