Mustard & Honey Pork Medallions

1 Tablespoon honey
1 Tablespoon red wine vinegar
1 teaspoon dry mustard
4 pork medallions
Salt and fresh ground pepper
2 Tablespoons canola oil or olive oil
Combine honey, vinegar and mustard in a small bowl and mix well.
Sprinkle pork with salt and pepper and brush with honey mixture.
Heat oil in skillet over medium high heat
When hot, add pork and cook until browned on both sides and somewhat firm when pressed with a fork.
