Buckwheat Soba Pasta

Hey cave friends -

Last weekend I was invited to a birthday potluck brunch. Something I approach with fear a trepidation because their is almost nothing I dare even try to eat with all my intolerance's. I have to laugh in that it does not mean I will not jump in with both feet and have a great time anyway. And if I take something I can eat ...........why worry!!!

This disappeared in no time.

Ingredients

8oz. Buckwheat Soba noodles
1 medium onion chopped
Three cloves of garlic chopped
8 oz white button mushrooms sliced
One half pound shrimp shelled and cleaned
1/2 teaspoon old bay seasoning
5 eggs

Simmer the Buckwheat Soba noodles for about ten minutes. Drain and set aside .

Meanwhile sauté the garlic , onions and mushrooms until soft.

Put the eggs in a blender or food processor with about a third of the shrimp, and a third of the mushroom mixture, the old bay seasoning and blend.

Place the noodles in an 8 X 8 pan and tuck the remaining shrimp and mushroom mixture into all the nooks and crannies

Pour the egg mixture over the top and cook in a 350 oven until eggs are set. Hard to give a time in that I am a mile high and foods cook differently here. Just watch it

Yikes ! It can’t get much better than that.

Ha,Ha I look forward to doing this with salmon, crab, tuna, scallops or most any other seafood.

Have some fun with it. I would love to hear how you might experiment with it. And any ideas to enhance it.

In the mean time just enjoy finding all kind of new combinations. It just makes MC sooooo much easier. And maybe even fun when you find foods that taste so good. And make you feel so good.

Hi Matthew,
All of the varieties of buckwheat soba noodles that I've seen have wheat flour as an ingredient. What brand do you use and where do you buy it?

It took some looking in that I found, as you did, that Soba Pasta is often made with a combination of Buckwheat and wheat flour.

Finally found a 100% Buckwheat Soba at a locally owned health food store. Not cheap at $4.99 for an 8 oz package but then it makes more than eight meals the way I combine it with other meat , vegetables and broth.

I do not eat lots of Buckwheat but it is something that is a nice, fun change on occasion. Most guest never notice it which is nice in that i can feel normal.

Well close enough is great for me! And sometimes close enough is the greatest joy. Makes me laugh thinking of years ago when I had the feeling I would NEVER be normal.
