Apparently, some restaurants haven't done their homework, so you really can't afford to let down your guard, until you've had enough experience with a particular restaurant to be confident that they can be trusted. I found this comment in a GF-oriented newsletter:
As always, we have to be constantly vigilant.Just a caution about gluten free menus. Like others, I was always relieved when handed a GF menu. Recently I ordered from such a menu at Ruby Tuesdays. I had previously told the waiter that I had Celiac Disease and could have no gluten. He handed me the menu and I happily ordered. Wasn't I surprised when my hamburger arrived on a bun (though the menu indicated it would not). The waiter's reply was "but it's not a wheat bun?!". After talking with the manager, it was obvious that even though the restaurant has a GF menu that this doesn't guarantee that the chef and the waiters are aware of what this means! So, I went without lunch (for fear of trying ANYTHING there) and they didn't even apologize!
