Potato Flour Mayonnaise (Vegan, Gluten-Free, Nut-Free, Soy-Free)
Recipe is from "Coping with Food Allergy" by Claude Albee Frazier, M.D.

Ingredients:

1-1/2 tbsp. potato flour
1/4 tsp. dry mustard
1/2 tsp. salt
2 tsp. sugar
1/4 cup cold water
3/4 cup boiling water
2 tbsp. lemon juice
1 tbsp. white vinegar
1/2 cup salad oil
Salt and pepper

Directions:
Mix dry ingredients in saucepan, then stir in cold water and mix well. Add hot water and cook just until mixture is clear. Cool to lukewarm, then gradually add remaining ingredients, beating constantly.

If it's good it should go in the Recipe section.

I haven't tried it, Hope (hmmm, I think you signed a post with a different name but don't have time to look it up right now) but if it is good then it should definitely go in the recipe section. Dee is our resident Chef Angel. Perhaps she might give it a try if she feels up to it (been having some allergy problems lately). I tried one of her recipes for mayonnaise and botched it up good so I'm not a good candidate.

I have been using Spectrum Canola Mayonnaise. It tastes great and is also free of most intolerances except eggs.

If you try the recipe be sure to let us know how it turns out.

I'll make some of this up tomorrow and give it the TNT test.. LOL!!
Looks very simple to make.
Have you made any up yet?????
Shirley, with the canola mayo that you are using, go to my "ranch dip' recipe and if you have the ingredients mix some up. Then take a cup of the canola mayo and if you have an empty butter container, add the mayo and a tablespoon of the dry ranch dip mix.. Really makes a difference for burgers or sandwiches. I haven't tried it yet in chicken salad, but plan to soon.

Dee...Will wait and see what yall think about the recipe! There is also a recipe on the net for Nomato I think you were going to be speaking with the company Polly?...I am new to all of this so dont have the ingredients on hand yet...also waiting on my results from enterolabs.

Made the potato mayo...
Not bad...
It has a mild mayo taste.
Actually, I was surprised when it was complete, of the taste..

The nomato is made with carrots, beets, lemon juice, etc.....
I think I posted some recipes with no tomato ingredients..

The potato flour mayo is an option, but I would still prefer the canola mayo if you can have it.
I definitely would cut back on the oil in your recipe.
