Paleo Muffins ???

Paleo Muffins ???

There is a Paleo cookbook out by Julie and Charles Mayfield. They include nightshade vegetables in their recipes so they aren't following the very strict rules we have seen in other books. However, they do have some recipes that sound great, even a chocolate cake!!! I don't think I'll make that but I did try their Morning Glory Muffins. Following the paleo diet for 2+ weeks has definitely helped with my symptoms and I do feel a lot better. I'm continuing to lose weight on this diet and I can't afford to lose any more. I don't know about anyone else but I can only eat a certain amount of meat and then I get nauseous. Hence the muffins. I ran out to Whole Foods to get ingredients I didn't have on hand and made them late this afternoon. They are GOOD!! Spread a little apple butter, nut butter or cheat with a tiny bit of jam and they are delicious. Perfect for breakfast or a snack when I'm hungry and need to eat something paleo but don't want meat. I can't eat raisins so I substituted walnuts. I'll list the ingredients, please let me know if they are truly Paleo.
Almond flour
cinnamon
baking soda
1/2 tsp salt
grated carrots
grated apple
shredded coconut
eggs
2 T honey (optional)
1/2 C coconut oil or avocado oil
vanilla extract
I changed the recipe slightly to make the dough a little more moist and left out raisins. So, am I cheating?

Sounds wonderful! Just mix and bake in muffin tins?

What can I substitute for Almond flour? Is chestnut flour OK?

I am not familiar with acceptable substitutions for nut flours. You would probably have to do some research.
The name of the cookbook is "Paleo Comfort Foods" by Julie and Charles Mayfield There are several recipes in the book I am tempted to try.
Here is the recipe:
Preheat oven to 350 and grease a standard sized muffin tin (12 c)
2 1/2 c almond flour
1 T cinnamon
2 tsp baking soda
1/2 tsp salt
2 C grated carrots ( or substitute: grated zucchini, canned pumpkin, bananas, etc)
1 large apple, cored and grated
1 C shredded coconut
1 C raisin (or dates) I substituted chopped nuts
3 lg eggs
2 T honey (optional)
1/2 C coconut oil or avocado oil
1 tsp vanilla.
Combine the dry ingredients and then stir in carrots, apples, coconut and raisins. Combine well.
Separately whisk together the eggs, honey, oil and vanilla. Pour this mixture over dry ingredients and mix well. It will be thick. (I waited to add the last cup of almond flour and thought the consistency was okay with just 2 C almond flour)
Spoon into muffin tin and bake in the middle or upper third of the oven. It took 25 minutes for regular sized muffins, larger ones can take 40-50 min. Check with a toothpick inserted into the middle of the muffin. If it comes out clean, they are done. Cool in pan for 10 min and then remove to a cooling rack.

Nutritional information: Calories (using grated zucchini) 360 calories (approx.)
Total Carbs (including nuts) 15
Total fat 31
Protein 9

Hi Sheila,
I have been eating Paleo this week and like you, I do feel better. At least I can say I am 90% compliant. I'm still eating Rice Chex for breakfast. But like you I am really feeling the need to add something with more flavor and more carb. These sound terrific. I don't think I'm even going to question if they are Paleo-- they simply sound too good to pass up.

Maybe I can use pecan or walnut flour. I can make it. I have to use egg substitute. I will try it. Looks delicious!

Sheila, OMG.
I made these this afternoon-- I can not believe how moist and sweet they are (with no sugar). I used dates, no nuts, but followed the recipe as you wrote it. I also used 2 cups of almond flour instead of 2 1/2. The consistency seemed good with 2 cups. Thank you so much for posting this recipe.

It is just sooooo nice to have something this filling and flavorful.

After Gabes posted about that cookbook a while back, I bought it, and the first recipe I tried was the morning glory muffins. They were a life saver on my road trip, as I had made a batch to bring along, and ate one every day. As well as being delicious, they settle well and have never caused me problems. I believe all the ingredients are paleo, so they should be fine on a paleo diet. I make them without carrots, raisins and honey, but they are still delicious, and quite filling.

Like you and others here, I'm not fond of meat, and struggle with bulking up on it. However, as time goes by and I eat more of it, my aversion seems to be decreasing, and I actually crave it at times :). I've noticed that as I gradually change my diet towards paleo, I feel better and better.

P.S. Another recipe from the book I've tried a few times is the pork tenderloin, p, b & j - it's delicious.

Here's a recipe I copied this morning for avocado brownies that sounds intriguing. The gal that posted it thought 4 oz of chocolate was too much for her palate (but maybe not mine :wink: ) It was from a low-carb forum so sugar substitutions were also suggested in lieu of honey.

I made them with chestnut flour. All my neighbors were sniffing at my door, and no one could believe what was in them. They are DELICIOUS!
I used half raisins and half chopped walnuts.
Next time I will add other dried fruit.

The muffins above call for ALMOND FLOUR. I have Bob's Red Mill finely ground ALMOND MEAL/FLOUR on hand. I think there is a difference. I wonder if mine will work as I would really like to try them.

I also want to try the brownies but at a later date.

May 21 I received my results from Enterolab and I am doing very well with eliminating eggs, dairy, corn & rice, soy, night shades, chicken and beef. I found ground turkey to be delicious. Never had a turkey burger before. Now I prefer them to hamburgers.

I had one beef meal in the last month and that was at the Grooms dinner. My grandaughter got married in Wisconsin.

Have been traveling for the past three weeks without any reactions. Carried a lot of allowable food with me and cooked in the motel rooms. Have been on 1 Entocort a day since June 1 and this week I am going to slowly start cutting back on the RX.

Had a lot of reading to catch up on when I got back.

What is Almond Flour? What is Almond Meal?:

Almond flour and meal are both just ground up almonds. Almond flour is most often made with blanched almonds (no skin), whereas almond meal can be made either with whole or blanched almonds. In either case, the consistency is more like corn meal than wheat flour. I find that for the most part they can be used interchangeably.

What is Almond Flour/Meal Good For?:

Almond flour is good in "quick-bread" type recipes, like muffins, nut breads, and pancakes (see recipes below). It's not good for foods such as bread that require a real dough (you can't knead it). Usually, more eggs are required when baking with almond meal to provide more structure. Almond meal can also be used in breading fish, but care must be taken not to burn it.

I used Bob's Red Mill Almond Meal/Flour and I was very happy with how they turned out. I could live on these.

Despite a foot of rain from TS Debby today, I couldn't wait another day to try these muffins! I'm so glad I did! They are delicious! I can eat them every day and feel so much more satisfied. Thank you so much for posting this recipe!

I also found a veggie burger mix by Joe's Quinoa Patties. They make several varieties, but I tasted (in the store) and bought the Sea Flavor. The ingredients are all organic - quinoa, wild lobster mushrooms, dehydrated - bell peppers, onions, garlic, carrots, celery, chia seeds, herbs, spices, sunflower seeds, and Himalayan salt. I don't know the individual herbs and spices. The mix is simple; you add water and shape into burgers, meatballs, etc. it was delicious, and I hope it will work for me since I miss veggie burgers so much. It can be ordered online.
